Wow this stew sounds just fabulous. I am also a big Herbes de Provence fan having found it much as you did, by the wonderful smell (and the I liked the look of little lavender flowers in the mix).

While "Herbes de Provence" mixtures can be great for certain things (e.g. casseroles), I think the individual herbs (unmixed) are better for single dishes. For example, I would use only one herb for a salad. One of may favorites is sliced tomates, drizzled with oil, slice mozerella cheese, toped with the basil herb. Simple dishes, simple herbs, great food.

Lorrie--I don't have a recipe with specific amounts, but I can tell you what is most often found in herbs de provence mixtures: rosemary, fennel, thyme, basil, tarragon, lavender, chervil and marjoram are the most commonly used ingredients in that mixture.

Herbs de Provence totally rocks. I use it whenever I make eggs (just sprinkle it over your omelette or scramble as it sets) or pasta.
