Adding fresh shrimp and oysters close to the end of this dish (along with the andouilli and chicken) adds SO MUCH to it.

Here in Metro Detroit we eat the pale version available at Popeye's Chicken and Biscuits, it's delicious to us since it's all we have.  Popeye's outlets are only in the city, and generally parts of the city we don't explore by night..except to get some jambalaya, As my husband waits in his car in the drive-through line the neighborhood entrepreneurs stroll by to offer their licit and illicit goods.  Every bite of jambalaya is seasoned by this brush with what we'll call a  very spicy world...</description>

					<description>It's nice to see that jambalaya is finally starting it's conspiracy to take the stomach's of the world by storm.  Also nice to know that you also choose not to use tomatoes.  Everyone I talk to here in south Louisiana firmly beleives that tomatoes make great salads, not jambalaya!  Thanks!</description>

					<description>Nicole--do you eat turkey, too, or just chicken? Because you can substitute turkey ham for the ham, or use a smoked turkey leg or wing to get the smokey taste from the ham into the dish. 

You can use spicy chicken sausage instead of the andouille, too. I have done that for non-pork people before. (I have a Muslim friend.) But the turkey ham and turkey smoked sausage or chicken spicy sausage makes a great substitution that tastes just as good as the original.</description>
