					<description>No, Peggy--Poori is different. It is an unleavened bread--basically like chapati or roti, that is fried. When you fry it, the tapping action causes steam to rise in the bread, blowing it up into a spherical balloon shape. 

Bhatura, as you can see is a yeast-raised bread--the dough is more like naan, which is baked in a hot clay oven called a tandoor. When you fry the dough, it, too will puff up, but not as dramatically as pooris will.

I should do a post on poori, but I haven't made it in a while. I shall have to rectify that before the baby is born!</description>

					<description>Thanks, Debbie--I never ate at Mela, but we do miss Akbar something fierce. Though, I learned a lot of my cooking by tasting Akbar's dishes, then going home and trying to recreate them, so, that is part of why I have such a strong North Indian stamp on my cooking.

I will have to try Swagat when we visit next time. Thanks for the idea.</description>
