Hadar--I see no reason why it would not work with tofu. What I would do is dust the tofu with a bit of cornstarch or flour and pan fry it gently to sear the outside of it and get a nice crispy crust. Then, I would add it to the onions, ginger and spices after they have cooked--at the same place where I added the chicken, and then, only stir fry more gently. I would add the mango at the same time, because you will not need to cook the tofu as long as the chicken, and you want the mangoes to get a bit of their juice cooked out.

I think it would be lovely with tofu, now that you mention it. I may have to try it myself!

If you are still eating some amounts of fish and seafood, this would certainly work with shrimp and probably a nice firm-fleshed fish like sea bass, or an oily fish like salmon. Tuna would also work well, I think.</description>
