I have no lemon extract, could I increase one of the other lemon flavourings for that cake? 

Also, it's fantastic that you posted recipes to fit the 10 cup cake tins. I bought one for myself as a 30th birthday present (I call it The Monstrosity) but only used it once to make test cakes! Now that I have some recipes, I am hoping to make the ginger lemon cake tomorrow for a cousin's birthday.

					<description>I have one of these bundt pans and recently used it to bake a cake (chocolate) for one of my guy friends.  Filled the center and the edges with red raspberries and made a raspberry coulis (with some nice white Spanish wine that I had at the house) to drizzle over the cake.  It was delish!

Can't wait to try the lemon ginger cake.  Looks like a sandcastle.  :)</description>
