I'm excited! Maybe you could feature one essential ingredient per week/month/whatever and tell us ahead of time so we can have it on hand for the post. Then you could build up our pantry and skills a little at a time.

Of course it's your blog, but wishing out loud might not hurt 8^)

I have an easy time finding Chinese ingredients, living in a city with not only one huge Chinatown, but three! But a lot of other people can't find even those which you consider basic staples. For them, it might be kind to suggest ways of evoking the spirit of Chinese cooking using ingredients one can find even if you live far from cities and Chinatowns in the middle of North America.

I, too, think this is a FANTASTIC idea. I have learned a lot from reading your blog generally but would love some simpler recipes to get my feet wet. I am lucky enough to live in a place where I can get the real ingredients, but as many people pointed out in the comments to the CI post, it really is a bit intimidating.

thank you and I look forward to reading more!

What a great idea! Also please include some writing about precise cutting, since you consider it so important.
