Thank you for your great series. It has prompted me to use my wok much more the last few weeks. I even cooked recipe-less a few times with my tastiest meal composed of a sliced salmon filets, broccoli, ginger, lemon zest-juice and soy sauce over rice. I have several oriental cook books (Ken Hom, Jeffrey Alford) but your site seems to get through my thick skull better than anything. Keep up the great work. PS have you checked out that book "Meat" by Hugh Fearnley Wittingstall yet? Very kind regards, J

You know, I'm not Jewish, Muslim, or vegetarian, but I still never even considered using lard to stir fry with. Maybe I should try that sometime when I'm feeling naughty (since I'm sure canola is more healthy).

I have tried stir frying with the peanuty tasting peanut oil before, and yes it was delicious!
