					<description>If I wanted to pare this down to, say, half the size (so 1.5lb cream cheese), what would you do with the eggs/egg yolks? 3+3 seems like too much, but 1+1 doesn't seem like enough...1+2? 2+1?</description>

					<description>Azalais--I use rosewater in most of my recipes that include strawberries. If you use just a little bit of it, it makes the strawberries taste more intense and berry-ish. If you use a bit more, the rose  flavor comes out and turns the strawberries into a sensuous experience. 

Rosewater is one of my favorite &quot;secret&quot; ingredients in my cooking, and I use it fairly often. Not enough to be overkill--enough to seduce and enthrall.

Folks--cheesecake, at least, from this recipe, is not hard. It just seems like it should be. It is actually quite simple and well worth trying.

					<description>It's funny, I always loathe cheesecake when it's purchased from a bakery or restaurant, but any time a friend makes it I want the first slice.
