I hope the white wine vinegar is acidic enough to retain some of the color, but if not, next time I'll use lemon juice as you did. But no matter what happens, I'm just thrilled to be cooking such fun, colorful veggies! i’m roasting in my oven right now a chopped head of purple cauliflower with a chopped head of orange cauliflower, with some garlic, olive oil, purple sage and white wine vinegar.
