Alix--I am very, very glad you enjoyed the recipe and are liking the blog.

The reason that I didn't soak the beans is because I was using a pressure cooker--you can soak beans before cooking them that way, but I never remember to. The time savings is about fifteen minutes or so--not really a worry.

If you ever get a chance to cook with a pressure cooker, give it a try....you may find that you like it better than your slow cooker.

I just wanted to thank you once again for a wonderful recipe. It was funny that you posted it not a few days after I was realizing I had never had red beans--so when your recipe did come up, I took it as a sign that it was time I did! I made them on the stovetop a week ago and loved it so much I'm making it again this week, attempting a crockpot version.

I continue to love reading your blog. :)

It just goes to show that when you take your time and use incredible ingredients, the best flavors shine through! Can't wait to eat my leftovers tonight!

Gorgeous, gorgeous recipe. Fast, easy, delicious, healthy and, just as important, the leftovers taste just as good the next day!

Oh how I love Cajun/Creole food.

Cheers!

Mmmm, red beans and rice. Very delicious!

So on the farting topic...some other ways to reduce that side effect are by making sure you soak your beans for a good while, rinsing and draining the soaking water thoroughly, and cooking the beans with a strip of kombu seaweed in the water. Some of the compounds in the seaweed help break down the fart-causing sugars in the beans.

Also, if you eat them frequently, your body gets used to them and you don't fart so much. I eat beans every day (sometimes twice a day!) and I don't think I'm any gassier than the average, non-bean-eating person....
