					<description>So how does one choose a good quality olive oil?  And if good Greek oil is fruity and lightly peppery, what does good Italian oil taste like?  I'm guessing that single-sourced oil is preferred over oils from olives grown in multiple countries and combined (as I've noticed many of the oils at the grocery are, especially the cheaper ones).</description>

					<description>Wonderful dish!  I agree that freshwater fish have a cleaner flavor than the saltwater varieties.  I can still remember the taste of a fresh caught panfried trout I had once while on a camping trip!</description>

Miome--thanks for catching that. I will edit--you preheat the oven after marinating.

This is what happens when writing with a baby on your lap--you think you know what you are writing, but between actually writing it down and keeping the wiggly baby's fingers off the keyboard--well, screw-ups are bound to happen.
