I cooked the chicken in the liquid as well, but I didn't get the same amount of "boil off." Still, with the grains thrown in to absorb the extra, it is now VERY hearty indeed! Yum. Thanks for this.

Elusis, I am going to change the amount of liquid in the recipe--I used the same amount as I used, but I cooked the chicken in the liquid, and as it boiled, much of the liquid boiled away, reducing in volume, so by the time I thickened it, it was a nice sauce that clung to all the other ingredients.

The lemons are awesome in this dish, aren't they? The peel of a citrus fruit contains a lot of flavorful essential oils which are great when used in food. I love that combination--the olives and lemons are just right.

I made this recipe tonight (though I turned out to have no parsley) and it was delicious. I also chose to just pre-chop the chicken breasts and thighs that I used, rather than cooking them whole and then shredding them.

My only quibble is that it seemed to me to have almost too much liquid. I was going to serve the stew over Trader Joe's "harvest grains" mix, and I wound up just throwing the whole package in because there was so much broth otherwise. Is it meant to be quite so soup-like? It seemed heavy on the liquid even after I went two rounds with flour/water mixture trying to get it to thicken. I suspect that when I make this again, I will use 1 or 1.5 quarts of broth.

One thing I like is that cooked like this, you can eat the rinds of the lemon wedges. They're tart and a little bitter, but in small bites, they are wonderful with the rest of the stew. No waste!

Your description of choosing and tracking specials sounds like my dream job. And good for you for post-event tracking, too many places don't do that and so are clueless the next time.
