My wife had a dish not long ago the ingredients of which she described as chicken, brined black ovlives, lots of lemons and barley. Perhaps it was served over barley. She loved it at any rate so I want to make something similar. Perhaps this is it. I'll t ry it anyway because I love the way you write.

Wow, I did make this and it was so fabulous, I wish I had made a lot more! The only question I had as I made it was I wasn't sure when to add the olives, so I waited til near the end of cooking. I bought special free-range "organic chicken" for this dish and it was delicious. Thanks and I'm sure I will make this again!

Mmm. This reminds me of an Algerian dish my host (grand)mother made when I studied abroad in Paris: chicken stewed with green olives and preserved lemons. It doesn't sound that exotic, but the flavor was unlike anything I'd ever eaten before.

I agree that a version of your stew using blood oranges would look beautiful. :)

When I say four dry cups--I mean four cups of it uncooked.
