I can't wait to try this soup it just sounds so wonderful. I have a question though...when do you add the rice? Does it stay whole or does it get blended? Thanks for posting this recipe!

Another use for the broccoli stalks is to use them when doing fresh juice. Then you don't have to bother with peeling them, just drop them in the juicer. I know this is not helping with your soup but does help get as much use as you can from your broccoli. I am going to make some of this soup as I have broccoli and kale around all the time. I put them in my juice daily.

Oh, I so want to make this, but I don't have an immersion blender (or a regular blender) so I don't think the texture would be very good. Gotta buy one of those things...

Hi Barbara! Thank you so much for this post. Without it I would never have thought that I could create such a delicious meal from the yellowing head of broccoli and the two sprouted potatoes that I had :) I omitted the rice and kale, sauteed a bit of carrot and celery with the onions, then pureed it in the traditional blender before straining it. It turned out super flavorful and creamy, even though I had omitted the half-and-half! Thanks again for providing me with such healthy and delicious inspiration :)

I mostly followed your recipe for this soup, and it was delicious! I added a sweet potato since I only had to a couple tiny regular potatoes, and it added a nice, subtle sweetness.
Thanks for sharing - it saved me from tossing some broccoli that was starting to wither away... :)
