		<description><![CDATA[My husband&#039;s vegetarian, and I was for a long time, so I&#039;m so used to cooking veg that meat meals seem much more outlandish to me. In fact it&#039;s a bit of a struggle to incorporate more meat into my cooking--something I&#039;m trying to do because I believe it&#039;s best for my children&#039;s nutrition.

Anyway, one nice thing about eating less meat is that it&#039;s so much cheaper! Every time I go to buy meat my eyes bug out at the price. Especially if you do try to buy local, grass-fed, etc.]]></description>

Mostly plants.&quot; at this time of year.  Today my household consumed eggplant, beet greens, rutabaga, green garlic, cucumbers, tomatoes, blueberries, cherries, parsley, carrots, cauliflower, and one peach, all from the farmers market.  We threw a few other food groups into our meals, but the base of each of our meals today was veggies.  Such abundance!]]></description>

Elizabeth--I forgot about that pasta sauce recipe--I should have added it to the post. It is a great one, you are right. I love all the vegetables in it and it is simple and ever so tasty!

Except in our house it was Meatless Fridays as we were Catholic and it was back in the days of no meat on Friday.  Funny because now I still try not to eat meat on Friday.  My Mom always had the BEST non-meat food, usually fish, but sometimes not...no one could beat her tuna casserole or her salmon patties or her mac and cheese (home made, no boxed stuff).]]></description>
