		<description>I have a yellowing paperback copy of the third edition of How to Cook and Eat in Chinese. Apart from what I learned from my mother and grandmother about cooking, that book and The James Beard Cookbook were what I used to learn how to cook.

At first, I thought of what I was doing as following the recipes. But I quickly learned that the real genius of the book is Dr. Chao&#039;s explanations of the principles behind each class of dish, and her basic, practical attitude. It has served me well for many years.</description>
